Unlike steel wheels, this device employs diamond and ceramic grinding discs, which minimize blade wear and prevent steel overheating during the sharpening process. The elastomeric angle guide maintains a consistent 20° grinding angle, making it suitable for kitchen knives, bread knives, hunting blades, fillet knives, pocket knives, and general household cutlery. The CC 120 operates in three distinct phases to achieve optimal results. Phase one pre-sharpens severely dulled or damaged blades with a smooth finish. Phase two performs the primary sharpening operation, while phase three completes the polishing and honing stage. This three-stage process creates what is known as a convex or arc-ground edge, which delivers superior sharpness and durability compared to conventional V-ground edges. The convex edge is notably more stable and longer-lasting, making it ideal for blades with hardness ratings of 58 HRC and above. The sharpener can also refresh serrated bread knives using phase three's polishing and honing disc.
